Beef Kaleji Tawa Masala Recipe
Ingredients
1. Beef kaleji (Beef liver) cubes 750g
2. Water as required
3. Adrak lehsan paste (Ginger garlic paste) ½ tbs
4. Sirka (Vinegar) 3-4 tbs
5. Pyaz (Onion) 3 medium
6. Cooking oil 4-5 tbs
7. Ajwain (Carom seeds) ¼ tsp
8. Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
9. Lal mirch powder (Red chilli powder) 1 tsp or to taste
10. Haldi powder (Turmeric powder) 1 tsp
11. Zeera powder (Cumin powder) 1 tsp
12. Sabut dhania (Coriander seeds) crushed 1 tbs
13. Garam masala powder ½ tsp
14. Dahi (Yogurt) thick & whisked ½ Cup
15. Hari mirch (Green chilli) chopped 1 & ½ tbs
16. Namak (Salt) 1 & ½ tsp or to taste
17. Lemon juice 1 tbs
18. Kasuri methi (Dried fenugreek leaves) 1 tsp
19. Hari mirch (Green chillies) sliced 2
20. Adrak (Ginger) julienne 1 inch piece
21. Hara dhania (Fresh coriander) chopped
22. Adrak (Ginger) julienne
23. Hara dhania (Fresh coriander) chopped

Directions
1. In a bowl,add beef liver,water,ginger garlic paste,vinegar,mix well & let it rest for 20 minutes then rinse with water & set aside.
2. In a bowl,grate onions with the help of garter & set aside.
3. On a griddle,add cooking oil,carom seeds,grated onion & mix well.
4. Add ginger garlic paste,mix well & cook until onions are translucent (2-3 minutes).
5. Add red chilli powder,turmeric powder,cumin powder,coriander seeds,garam masala powder,mix well & cook on low flame for 2 minutes.
6. Add yogurt,green chillies & mix well,cover & cook on low flame until oil separates (4-5 minutes).
7. Add beef liver,mix well and cook for 4-5 minutes,cover & cook on low flame until its tender (25-30 minutes).
8. Add salt,lemon juice & mix well.
9. Add dried fenugreek leaves,green chillies,ginger & fresh coriander,cover & simmer on low flame for 4-5 minutes.
10. Garnish with ginger,fresh coriander,lemon slices & serve!
