Hyderabadi Style Qubooli Rice Recipe

Ingredients

1. Boiling water as required
2. Namak (Salt) 1 tbs
3. Zeera (Cumin seeds) ½ tsp
4. Badi elaichi (Black cardamom) 1
5. Darchini (Cinnamon stick) 1
6. Badiyan ka phool (Star anise) 1
7. Laung (Cloves) 2
8. Tez patta (Bay leaf) 1
9. Hari mirch (Green chillies) 2-3
10. Podina (Mint leaves) chopped 1 tbs
11. Hara dhania (Fresh coriander) chopped 1 tbs
12. Lemon juice 1 tbs
13. Chawal (Rice) ½ kg (soaked 30 minutes)
14. Ghee ¼ Cup
15. Pyaz (Onion) sliced 2 medium
16. Zeera (Cumin seeds) 1 tsp
17. Darchini (Cinnamon stick) 1
18. Sabut kali mirch (Black peppercorns) 3-4
19. Hari elaichi (Green cardamom) 2
20. Tamatar (Tomato) sliced 1 medium
21. Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
22. Hari mirch (Green chilli) crushed 1 tbs
23. Namak (Salt) ½ tsp or to taste
24. Lal mirch powder (Red chilli powder) 1 & ½ tsp or to taste
25. Dhania powder (Coriander powder) 1 & ½ tsp
26. Haldi powder (Turmeric powder) ½ tsp
27. Garam masala powder ½ tsp
28. Jaifil powder (Nutmeg powder) ¼ tsp
29. Javitri powder (Mace powder) ¼ tsp
30. Dahi (Yogurt) whisked ½ Cup
31. Lemon juice 1 & ½ tbs
32. Chana daal (Split bengal gram) 1 & ½ Cup (soaked & boiled with salt)
33. Water ½ Cup or as required
34. Hara dhania (Fresh coriander) chopped 1-2 tbs
35. Podina (Mint leaves) chopped 1-2 tbs
36. Hari mirch (Green chillies) slit 3
37. Pyaz (Onion) fried handful
38. Pyaz (Onion) fried 2-3 tbs
39. Hara dhania (Fresh coriander) chopped 1 tbs
40. Podina (Mint leaves) chopped 1 tbs
41. Hari mirch (Green chilli) slit 2
42. Zarda ka rang (Orange food color) ½ tsp
43. Kewra water 1 tsp -Ghee 2 tbs

Directions

1. In boiling water,add salt,cumin seeds,black cardamom,cinnamon stick,star anise,cloves,bay leaf,green chillies,mint leaves,fresh coriander,lemon juice & mix well,cover & cook on low flame for 2-3 minutes.
2. Add soaked rice,mix well & boil on medium flame until 3/4th done then strain & set aside.
3. In a pot,add ghee & let it melt. -Add onion & fry on medium flame until light golden.
4. Add cumin seeds,cinnamon stick,black peppercorns,green cardamom & mix well.
5. Add tomato & mix well.
6. Add ginger garlic paste,green chilli,salt,red chilli powder,coriander powder,turmeric powder,garam masala powder,nutmeg powder,mace powder,mix well & cook until tomatoes are soft (approx. 2-3 minutes).
7. On low flame,add yogurt,lemon juice,mix well & cook on medium flame until oil separates (3-4 minutes).
8. Add split bengal gram & mix well.
9. Add water,fresh coriander,mint leaves and green chillies,cover & cook on low flame for 4-5 minutes.
10. Add fried onion,boiled rice,fried onion,fresh coriander,mint leaves,green chilli,orange food color,kewra water and ghee,cover & steam cook on low flame for 8-10 minutes.
11. Garnish with fried onion & serve!
