Ingredients

1. Boneless mutton 750g (with 10 % fat)
2. Kacha papita (Raw papaya) paste 1 & ½ tbs
3. Namak (Salt) 1 tsp or to taste
4. Safed mirch powder (White pepper powder) ½ tsp
5. Zeera powder (Cumin powder) 1 tsp
6. Kali mirch powder (Black pepper powder) 1 tsp
7. Garam masala powder 1 tsp
8. Lal mirch powder (Red chilli powder) ½ tsp or to taste
9. Dhania powder (Coriander powder) ½ tsp
10. Hari mirch (Green chilli) paste ½ tbs
11. Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
12. Cream 2 tbs (optional)
13. Dahi (Yogurt) whisked ½ Cup
14. Lemon juice 1 & ½ tbs
15. Nurpur Butter salted ¼ Cup (approx. 50g)

17. Lehsan (Garlic) chopped 2 cloves
18. Hara dhania (Fresh coriander) chopped 1 tbs
19. Kashmiri lal mirch (Kashmiri red chilli) powder ¼ tsp

Directions

1. In a bowl,add mutton,raw papaya paste and mix well,cover & marinate for 2 hours.
2. Add salt,white pepper powder,cumin powder,black pepper powder,garam masala powder,red chilli powder,coriander powder,green chilli paste,ginger garlic paste,cream,yogurt,lemon juice,butter (microwave for 30 seconds) & mix well,cover & marinated for 2 hours.
3. In a frying pan,add butter & let it melt.
4. Add garlic & sauté for a minute.
5. Add fresh coriander,kashmiri red chilli powder,mix well & set aside.
6. Thread marinated mutton on metal skewers & grill on burning charcoal until done and apply prepared herbed butter in between.
7. Drizzle prepared herbed butter and serve with naan,raita & salad.
