Mutton Shorba Recipe

Ingredients

1. Cooking oil ½ Cup
2. Pyaz (Onion) sliced 2 medium
3. Mutton mix boti ½ kg
4. Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
5. Zeera (Cumin seeds) ½ tbs
6. Badi elaichi (Black cardamom) 1
7. Laung (Cloves) 2-3
8. Darchini (Cinnamon) 2 sticks
9. Hari elaichi (Green cardamom) 2-3
10. Sabut kali mirch (Black peppercorns) ½ tsp
11. Water ½ Cup or as required
12. Kashmiri Lal mirch (Kashmiri red chilli powder) 2 tsp
13. Dhania powder (Coriander powder) 1 tbs
14. Garam masala powder 1 tsp
15. Haldi powder (Turmeric powder) ½ tsp
16. Lal mirch powder (Red chilli powder) 1 tsp or to taste
17. Namak (Salt) 1 tsp or to taste
18. Dahi (Yogurt) whisked ¾ Cup
19. Hari mirch (Green chillies) 3
20. Hara dhania (Fresh coriander) chopped 2 tbs
21. Water 2 Cups or as required
22. Water 1 & ½ Cup or as required
23. Jaifil & Javitri powder (Nutmeg & Mace powder) ½ tsp
24. Kasuri meethi (Dried fenugreek leaves) 1 tsp
25. Hari mirch (Green chilli)
26. Hara dhania (Fresh coriander) chopped

Directions

1. In a wok,add cooking oil,onion & sauté until translucent.
2. Add mutton mix boti and mix well until it changes color.
3. Add ginger garlic paste,cumin seeds,black cardamom,cloves,cinnamon sticks,green cardamom,black peppercorns,mix well & cook for 4-5 minutes.
4. In a small bowl,add water,kashmiri red chilli powder,coriander powder,garam masala powder,turmeric powder,red chilli powder,mix well & set aside.
5. In wok,add salt and mix well.
6. Now add spices mixture,mix well & cook for a minute.
7. Lower the flame,add yogurt,mix well & cook for 2 minutes.
8. Add green chillies,fresh coriander and mix well.
9. Add water and bring it to boil,cover & cook on low flame until meat is tender (35-45 minutes) then cook on high flame until oil separates.
10. Add water and mix well.
11. Add nutmeg & mace powder,dried fenugreek leaves and mix.
12. Garnish with green chilli,fresh coriander & serve!
