Ingredients

1. Mutton boneless cubes 750g
2. Kacha papita (Raw papaya) paste 1 & ½ tbs
3. Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
4. Namak (Salt) 1 tsp or to taste -Water 1 Cup
5. Cooking oil ¼ Cup
6. Tamatar (Tomatoes) chopped 3 medium
7. Hari mirch (Green chillies) sliced 6-8
8. Pyaz (Onion) fried 3 tbs
9. Lal mirch powder (Red chilli powder) 1 & ½ tsp or to taste
10. Dhania powder (Coriander powder) ½ tbs
11. Kali mirch powder (Black pepper powder) ½ tsp
12. Zeera powder (Cumin powder) ½ tbs
13. Garam masala powder ½ tsp
14. Dahi (Yogurt) thick 1 Cup -Water 1 Cup or as required
15. Lemon juice 1 tbs -Kasuri methi (Dried fenugreek leaves) 1 tsp
16. Hari mirch (Green chilli) sliced 1-2
17. Adrak (Ginger) julienne
18. Hara dhania (Fresh coriander) chopped
19. Lemon slices 5-6 -Pyaz (Onion) rings

Directions

1. In a bowl,add mutton,raw papaya paste,ginger garlic paste,salt & mix well,cover & marinate for 4 hours.
2. On a griddle,add marinated mutton,water and mix well,cover & cook on low flame for 14-15 minutes then cook on high flame until dries up and move mutton pieces on one side of the griddle.
3. Add cooking oil,tomatoes,green chillies & mix well.
4. Add fried onion,red chilli powder,coriander powder,black pepper powder,cumin powder,garam masala powder & mix well.
5. Add yogurt,mix well & cook for 2-3 minutes.
6. Now mix well mutton pieces & cook for 2 minutes.
7. Add water and mix well,cover & cook on low flame until tender (14-15 minutes).
8. Add lemon juice,dried fenugreek leaves,green chilli,ginger,fresh coriander and lemon slices,cover & simmer on low flame for 2-3 minutes.
9. Garnish with onion rings & serve!
