SPICY TIKKA BOTI recipe

Ingredients

1. Hari mirch (Green chillies) 2-3
2. Lehsan (Garlic) cloves 4-5
3. Kacha papita (Raw papaya) 1/4 Cup
4. Adrak (Ginger) 1 inch piece
5. Lemon juice 1 & ½ tbs
6. Beef boneless cubes ½ kg
7. Badi elaichi (Black cardamom) 1
8. Hari elaichi (Green cardamom) 2
9. Jaifil (Nutmeg) 1/4 piece
10. Javatri (Mace) 2 blades
11. Sabut kali mirch (Black peppercorns) ½ tsp
12. Laung (Cloves) 5-6
13. Zeera (Cumin seeds) 1 tsp
14. Dahi (Yogurt) hung ½ Cup
15. Lal mirch powder (Red chilli powder) 1 tsp or to taste
16. Lal mirch (Red chilli) crushed 1 tsp
17. Dhania powder (Coriander powder) 1 tsp
18. Haldee powder (Turmeric powder) ½ tsp
19. Namak (Salt) 1 tsp or to taste
20. Hara dhania (Fresh coriander) chopped 2 tbs
21. Zarda ka rang (Yellow food color) 1/4 tsp
22. Cooking oil 1 & ½ tbs

Directions

1. In chopper,add green chillies,garlic,raw papaya,ginger,lemon juice and chop well & set aside.
2. In bowl,add beef boneless cubes,grinded papaya mixture and mix well,cover and marinate for 30 minutes.
3. In spice mixer,add black cardamom,green cardamom,nutmeg,mace,black peppercorns,cloves,cumin seeds,blend well & set aside.
4. In marinated meat,add yogurt,ground spices,red chili powder,red chili crushed,coriander powder, turmeric powder,salt,fresh coriander and mix well.
5. Add yellow food color,cooking oil and mix well,cover and marinate for 4-6 hours in refrigerator.
6. Thread marinated meat into skewers.
7. Put skewers on (burning charcoal) bbq grill and grill from all sides until done and basting with oil.
